Hi Bishnu,

the first reason why you do not want to boil your milk when preparing a coffee is because you don't want to burn your customers tongue.

Have you ever burnt your mouth? You won't be able enjoy a coffee for 2 days.

second - you are right - you will change the flavour. When boiling the milk you will pump lots of air into it which will take away the silky smooth taste that you are looking for when enjoying a good coffee.

And yes, you are right again, you won't be able to make a coffee look good with your milk boiled since the whole texture is different.

Try it out! make a coffee with a really good & silky milk not hotter than 85 degrees Celsius and then make another one with your milk 'burnt'.

Happy baristering
